Denver and Sushi, it's not exactly the first thing you think of when picturing our wonderful city far from any beach or ocean.  But in today's world it's all about airplanes and airports.  In San Francisco, New York City, or even the tropical island of Hawaii folks may be eating the same salmon, tuna, uni, or fresh water eel that flew in earlier that day.  It is a global economy.  So does that mean that we can have some of the best Sushi restaurants in the country... yes it does.  And a number of locals who travel the world would agree that we have some great sushi chefs who can hold their own against anyone anywhere.
